Central American Inspired Meals: Part 1 of 2

Tostones with Falafel and Avocado-Hummus Dip
Ingredients:
For the Tostones:
- Green plantains
- Vegetable oil, for frying
- Salt, to taste
For the Falafel:
- Dalal's Original Falafel from Infused Mediterranean Foods
For the Avocado-Hummus Dip:
- 1 ripe avocado
- 1 cup Infused Mediterranean Foods authentic hummus
- 1 tablespoon freshly squeezed lime juice
- Salt and pepper, to taste
Instructions:
1. Peel the green plantains and cut them into thick slices.
2. Heat vegetable oil in a skillet over medium heat.
3. Fry the plantain slices until golden and crispy. Remove from the skillet and drain on a paper towel.
4. Using a tostonera or the bottom of a flat heavy object, flatten the plantain slices.
5. Return the flattened plantains to the skillet and fry again until they are golden and crispy. Remove and drain on a paper towel. Sprinkle with salt.
6. Reheat the falafel according to your preferred method.
7. For the avocado-hummus dip, mash the ripe avocado in a bowl until smooth.
8. Add the Infused Mediterranean Foods authentic hummus, lime juice, salt, and pepper. Mix well to combine all the ingredients.
9. Serve the tostones with falafel on top and the avocado-hummus dip on the side for dipping.
