A Taste of the Mediterranean: Falafel-Stuffed Bell Peppers
Welcome back to our "Prep&Plate" series! Today, we're taking a classic dish and giving it a Mediterranean twist with our Dalal's Falafel. Get ready to savor our recipe for Falafel-Stuffed Bell Peppers.
This delicious and nutritious dish is packed with flavor and showcases the versatility of our falafel. It's perfect for a weeknight dinner or a special occasion.
Here's what you'll need:
- 4 bell peppers, tops cut off and seeds removed
- 8 pieces of Dalal's Falafel from Infused Mediterranean Foods
- 1 cup of cooked couscous
- 1 can of diced tomatoes
- 1 small onion, diced
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Feta cheese and fresh parsley for garnish
Start by preheating your oven to 375°F (190°C).
In a large pan, warm up your Dalal's Falafel according to the package instructions. Once warmed, crumble the falafel into small pieces.
In the same pan, add the diced onion and minced garlic and cook until the onion is translucent. Then, add the diced tomatoes, cooked couscous, and crumbled falafel to the pan. Season with salt and pepper to taste and stir to combine.
Next, stuff each bell pepper with the falafel-couscous mixture and place them in a baking dish. Cover the dish with foil and bake in the preheated oven for about 30 minutes, or until the bell peppers are tender.
To serve, sprinkle each stuffed pepper with crumbled feta cheese and fresh parsley.
